With the Holidays in our near future and people searching for quick and easy appetizers (not to mention inexpensive if you’re anything like me) to bring to parties, I’ve decided I’m going to share my famous “Fiesta Wraps” for anyone who falls in this category of “Appetizer Searching”. During the holidays I have to write this recipe down a handful of times for friends or family, so next time someone asks me for this recipe, you can bet I’ll say “Hey go check it out on my blog!”
What you’ll need:
1 pack burrito size tortillas
2 – 8 oz. packages of cream cheese
1 pack of fiesta ranch dip mix (FYI, go to Wal-Mart for this. Kroger’s never has it. It can be found in the dressing isle.)
1 regular size Ziploc bag of crushed up Doritos (Cheesy Doritos)
1 cup shredded cheese (I personally use fiesta cheese or any Mexican-style cheese)
1 small can black chopped olives (optional)
1/2 pack of Real Bacon Bits (optional)
1 tbsp crushed jalapenos (optional – yummy if you like a little bit of spiciness)
Soften cream cheese in microwave (I usually put it in for 1 minute, but take it out to stir at 30 seconds). Add fiesta ranch dip to softened cream cheese. Mix well. Then add the rest of the ingredients (order does not matter).
Burrito size tortilla shells are generally pretty soft, but if you happen to just grab “regular tortilla shells” they can be a bit stiff. When I do that, I throw them in the microwave for 30 seconds to soften them up, allowing them to roll up easier.
Spread cream cheese mixture evenly on a tortilla shell, roll up, then cut into bite size pieces.
Enjoy! P.S. I hardly ever serve the “end pieces”. They aren’t always the prettiest, but they sure are delicious, so I save them for my family and myself to nibble on=)
